This is the Okinawan Sweet Potato, a staple on this island. It looks like a normal potato on the outside, but cut it open and this beautiful sight is what you find. They are sooooo yummy! Keira's preschool took a field trip this week to a sweet potato patch. The idea was for the kids to dig around and fill their bag with sweet potatoes. According to our friend Amanda, who accompanied her son on the trip, Keira was absolutely disgusted with the whole idea. My little clean freak wouldn't dig, but she did pick up potatoes that didn't need to be dug out. We have a whole, wonderful bag. The first night we made sweet potato chips (oh, they were good), and I think now we'll try them mashed or just baked. Wish we could find these back in the states...
